The Koen Dewettinck talks on chocolate production promote local solutions in the developing world where cocoa beans are exported to the north for production. The laboratory head at the Universiteit Gent's Department of Food Safety and Food Quality studies chocolate for a living and has found a delicious way to give back through his work. He has begun to lead workshops in areas where cocoa beans grow to teach the local people about bean processing. This allows them to alter production to meet tastes of that area, while also encouraging the continued growth of that industry.
